Hello friends,
Today I am going to tell about a recipe that I made in Holi first time. It is a very special dish and very famous in Jharkhand and Bihar. The name of the recipe is 'Gujiya'. It is a sweet dish made from khoya, Suji and Maida and dry fruits.
Ingredients-
(To made Gujiya dough)
Maida (white flour )- 2 cup
Desi Ghee - 3 table spoon
Salt- one pinch
(For filling inside in Gujiya)
Suji (semolina)- 1/2 cup
Khoya (milk solids)- 2 cup
Kaju (Cashew) -2 spoon
Almond -2 spoon
Pista -2 spoon
Saunf (fennel) - half tea spoon
Kismiss(Raisins)- 3 spoon
Dry Coconut - half cup
Sugar - 2 cup
Elaichi powder -half tea spoon
Oil refined - for deep fry
Preparation-
- First make a dough- Mix maida and ghee and pinch of salt (it is optional you can add or not). Mix well all ingredients until it mix like a dry ball. Add little little water as required to make a little hard dough like puri dough.
- Keep the dough aside with wet cotton warp on it. It make dough soft and smooth. Keep it for 30 minutes.
- Take a mixture jar add almond on it, grind just one or two round . It should not be powder. Need like break well. Keep a side almond in plate. In same process we have to grind kaju and pista aslo.
- Make powder of sugar in same process. And keep it in a bowl.
- Take a pan, on the flam. When it will medium hot add one table spoon ghee. When ghee will hot add suji or semolina on it. When it will come to fry golden. Add grinned nuts and stir, make it golden brown. Flam should be low just 1 or 2 minute it will be take to fry.
- Pour the mixture of suji and nuts stuff on powder sugar mix well with spoon.
- In same pan add khoya and stir untill smooth and soft.Add grated dried coconut mix well. Add kismiss and elaichi powder and saunf on it and stir for 30 second to 1 minute and pour it on mixing bowl.(You can cut the kismiss in middle or cut in 2 or 3 pieces.)
- Mix well with spoon and if need you can mix with hand when it will cold. Like this๐
For deep fry-
Take a fry pen. On the gas. Pour refined oil .
Take the dough and make small ball like peda or puri. With belan make little puri size and fill the khoya suji fillings of 1 to 2 spoon. Keep the filling in center then fold it half like Gujiya shape and press the corner with finger. If you have Gujiya maker then good or you can make design with fork spoon to press the all round corner. Deep fry in low to medium hit until golden brown. Now your tasty and sweet Gujiya is ready for celebrating Holi.
